Scientia and conscientia are both related to scire.  Thus "science" broadly means "knowledge" in Latin as opposed to empirical study of nature.  Similar to the German wissenschaft.

A participial form of "stare" is stante, thus substantia, consubstantialis (as in the Creed) etc.  This makes sense.  Philosophically, you can think of substance as what stands under or beyond the appearance of a thing.
