Were there ever in Church history prominent anti-popes during an interregnum?

Yes. The antipopes St. Hypollitus, Christopher, Boniface VII, Clement III, Clement VII, Benedict XIII, and John XXIII were antipopes during interegnums between actual Popes.

Yes, there was an antipope John XXIII. The 20th century John XXIII chose that name to make it even more certain that the antipope one was an antipope. (Although some crazy conspiracy theorists say he chose it because he wanted to be antipope… haha.)

Well, he seems to have died a Martyr for the Faith after he was reconciled to the Church. I see no problem. Ste Jeanne d'Arc died excommunicated.
