What are the best Catholic reference books to own?  A book that has all the Catholic teachings, canon, dogmas, beliefs, etc
I've only ever known the bible.

It has been a great resource for me.
I don't own this book, but I often hear of it spoken about in terms of what you are looking for:  "Sources of Catholic Dogma" by Fr. Denzinger.

That is the go to for what Porkncheese asked for. Here it is at archive.org in the Loreto edition, and here is a website with it online,

Awesome thanks guys. The chronological index is cool. But it's harder to find the church teachings is on a certain subject like salvation, trinity, etc
What about something that is indexed by topics? 

So there are beliefs, doctrines, dogmas, creeds, canon and probably more. Like what is what? Trying to define them is tricky even with the internet.
Some things in the book are written as if they were suggestions, other things are written like its the law.
"This is the Faith" by Canon Francis Ripley is very good as well. He gives many good, thorough explanations of many of the Church's teachings. While I don't recall that the book explicitly says so, it's written almost as if to equip a Catholic to respond to Protestants.
