Broccoli Cheese Soup

1/4 c onion, chopped
1 tbsp margarine
1 lrg head of broccoli, chopped
1 med. potato, finely chopped
3 c water
4 tsp chicken bouillon powder
2 1/2 c milk
1/2 tsp salt
1/4 tsp pepper
1 c cheddar, grated

Saute onion in butter until clear and soft.

Boil water, broccoli, potato, and bouillon powder together until vegetables are cooked. Add onions.

Put in blender and chop until they are the desired coarseness.

Add milk, salt, and pepper. Simmer together until hot.

Add cheese. Stir to melt.

Late edit: you'll want to remove the bouillon powder if you make it on Friday. :)

I made these pork chops last night, and figured I'd post it here.  Marinade for 2-3 days, and they cook in 15 minutes.

3 large pork chops
1/4 cup olive oil
1/2 cup balsamic vinegar
3 habanero peppers, rough chopped (big pepper pieces make it easier to remove after the chops are cooked, for the little ones)
2 tsp ground ginger
2 tsp paprika
3 cloves garlic, minced
2 tsp dried oregano (I used 2 x 6" oregano sprigs with the leaves stripped off)

Combine the above in a freezer bag of glass bowl.  Add the pork chops and marinade 2-3 days, flipping every 12 hours (-ish).  Grill 15 minutes over medium high flame, drizzling with reserved marinade each time they're flipped.

We're making crockpot white chili tonight.  New recipe, so if it's worth anything, I'll post that tomorrow.

Cheating, easy, in-a-rush-and-I-don't-have-time-to-cook-properly

Macaroni Soup

1 box of macaroni and cheese (i.e. Kraft Dinner, etc)
1 can tomato soup

1. Prepare macaroni and cheese according to package directions. Set aside.

2. In a separate box, heat tomato soup according to directions on can.

3. Combine tomato soup & mac & cheese. Serve immediately.

Marginally more nutritious than fast food, and a heck of a lot cheaper, especially if you use store-brand mac & soup.

The white chili was a HIT!! Although I ended up not making it in the crockpot.

2 lbs chicken meat, cubed (I used breasts)
Large diced onion
4 cloves garlic, minced
3 Tbsp olive oil
10 cups chicken broth
1 ham bone
1 1/2 Tbsp chopped fresh oregano
2 small cans chopped green chilis
6 cans great Northern beans, mash 2 of them with a tater masher
1 Tbsp cayenne
1 Thsp cumin
2 tsp cilantro
Salt n peppa to taste

Heat the oil over meejum high heat in a large pot. Add chicken and onions and brown lightly. Add garlic and stir, cook 2 additional minutes. Add remaining ingredients and bring to boil for 5 minutes. Reduce to simmer for 30-45 minutes. Serve with diced jalapeños, monterrer jack, and nacho chips.

Super easy recipe that my wife loves.

Black bean and pumpkin soup (meatless)

6 cups of pumpkin puree (I process the ones the kids bring home from school)
5 cups broth
4 cloves minced garlic
1 small minced onion
2 Tbsp olive oil
2 cans black beans, drained
2 sprigs of oregano
1 tsp cumin
1/2 tsp ginger
Pinch of cinnamon
1/2 tsp cayenne
1/2 tsp coriander
2 bay leaves
Salt and pepper to taste

Heat the oil over medium-high heat, add onions and sauté until translucent. Add garlic and cook another minute, stirring. Add pumpkin, then broth and stir, bringing to boil. Add remaining ingredients and boil for 10 minutes. Reduce to simmer for 20-30 minutes.

This is also really good with 5-6 slices of cooked and crumbled bacon stirred in.

Oooo... that sounds good! I've got some pumpkin in my fridge I need to use up.

One of my kids' favourite breakfasts:

Cheese Eggs Toast

Top a hot buttered slice of toast with a generous slice of cheese and a fried egg (any style).

Serve immediately, eat with your fingers or with a fork and knife (depending on your mess tolerance and the runnyness of your egg).
Serve with a nice fruit salad, and tea or coffee.

Add a slice of tomato or avocado on top of your egg.
Good with ketchup.
Add bacon or split sausages between your egg and cheese.

Argentine beef and tater casserole

1 1/2 lbs ground beef
2 cloves minced garlic
Cumin, cayenne, salt, pepper to taste
4-5 large potatoes
Seasoning to make mashed taters (I like milk, butter, salt, and mashed garlic)

Cook the beef well, draining the fat. Season with the garlic, cumin, salt, pepper, and cayenne. Peel and boil the taters, then mash and season them. In a 9x13 greased baking dish, spread a layer of mashed taters, then a layer of beef, then top the beef with more mashed taters. Sprinkle the top layer with parmesan or smoked paprika. It stores well for 2-4 days in the fridge. Since it's already cooked, reheating is 350F for 15-20 minutes, when the top layer is lightly golden.

Kinda Like Apple Pie Tea

hot water
1 apple cinnamon tea bag
hot milk (can substitute soy, coconut, rice milk, etc)
caramel syrup (with or without sugar)*
whipped cream (optional)

Steep tea bag in hot water according to package directions. Only fill cup about 2/3 way with hot tea

Add 1/3 mug hot milk (heated according to preferences - steamed, stove, microwave, etc) and a generous amount of caramel syrup, to taste

top with optional whipped cream or milk foam


Cheatin' caramel syrup (with sugar)

1 c white sugar
1 c water
2 tsp caramel flavouring (usually sold in the baking supplies or spices)

Bring sugar and water to a boil, stirring frequently until sugar is dissolved. Remove from heat once it comes to a boil and add caramel flavouring, stirring well. Store in fridge. Makes about a cup of syrup.

Red Beans & Rice

1 lb dry red kidney beans
1 lb Andouille sausage, sliced
2 bay leaves
4 cups water
3 green onions, minced
1 small yellow onion, minced
1/4 cup olive oil
2 celery stalks, diced
1 diced bell pepper (orange or red give it a nice color :))
6 cloves minced garlic
2 tsp thyme
1 Tbsp parsley
1/2 tsp cayenne
1/2 tsp sage
salt and pepper to taste

Soak beans overnight in water.  Drain and rinse beans, then set aside.
Heat the oil in a large pot over meejum heat.  Add onion, celery, green onion, and bell pepper, sausage and sauté until the onion starts to turn translucent, 6-7 minutes.  Add garlic and cook 2-3 additional minutes.  Add water and remaining ingredients, reduce to simmer 2 hours.  Mash about 1/4 of the beans prior to serving.  Serve over rice.
