I do similar. I do 2 litres at a time, then strain it afterwards. Strain a bit for greek-style yogurt, strain a lot for yogurt "cheese" (keep the whey for lots of different things!). I'm not high-tech or anything though with temps, I just turn my crock on at 4 p.m., turn it off at 7, check it around 9:30, maybe turn crock back on for 5-10 min, add seeding/starter yogurt, unplug and wrap in a towel or two. When I get up with the kids in the morning... voila, yogurt! I try to use the organic milk when it's on clearance.

And you know what's better for you than homemade yoghurt?

Homemade saurkraut!

Yah, I know! I remember my grandmother always having some stewing in a crock growing up. Yum! It's on my "to do" list, I'm told it's ridiculously easy.

Now I'm craving sausage and kraut.
