Yes, our bodies do need fat to function properly. 

Low fat everything is not good for us.  While dairy has good fats, it also has alot of sugars in it, so I try to limit myself.  And I try to drink raw milk when I do have dairy.  Nothing like it.  And the amount of cream is amazing. 

You also have to be careful with some of the vegetable oils because they are produced from non organic soybeans and if soy is not organic then they are GMO and that is a whole other can of worms. 

The Weston Price Foundation has alot of good information on healthy fats and how to incorporate them into our diets.  He compiled many years of research of people all over the world and showed how their diets were either a help or a hindrance to their health and well being. 

A good cookbook is Nourishing Traditions from Sally Fallon.
