The most obvious one: By St. Thomas Aquinas, where he comments on the 4 Gospels: The Catena Aurea.  Or rather, he quotes various fathers of the Church for every verse in the 4 Gospels.
The Fathers of the Church provide the largest and most important saintly commentary.  However there is no single book of them.  Seek out sets of English translations of the Fathers of the Church.  The Catholic University of America Press has been publishing "The Fathers of the Church" series since the late forties, and is still publishing new volumes.  The commonly found sets published by Protestants, such as the "Nicene Fathers", the "Ante-Nicene Fathers" and the "Post-Nicene Fathers" is another good resource, although sometimes need to be read cautiously with regard to the notes etc.  But they do strive for accuracy of translation.
