The problem with Apicius is the quantities aren't recorded.

You can experiment.

There are two good books I have here that contain recipes based on the authors' and others' experiemtns.

Roman Cookery by Mark Grant

A Taste of Ancient Rome by Ilaria Gozzini Giacosa translated into English by Anna Herklotz.

The recipes are Apicius' and some other Roman writers.
