This is true. Perhaps I <i>am</i> part Mexican, or maybe I just eat beans alot? Anyhow, at Chez Frerejacques tonight it's going to be tostones (twice fried plantains with garlic lime sauce) accompanied by from-scratch black beans and rice Cuban style, the way my godmother taught me to make it - no measuring.
In college I missed the beans from home so much that I invented a dormatory version: buy a giant can of black beans and a jar of sofrito from your local purveyor of Goya foods. Order a quart of steamed white rice from the Chinese place. Microwave the sofrito and beans until you hear sizzling, mix in the rice, microwave it again for a minute. Refuse to feed anyone who doesn't bring their own lime or who boges the hot sauce.
