I could use a little help trying to come up with a meatless, dairyless, eggless dish to make for the Redemptorists who are preaching a mission at my chapel. They are abstaining for advent.
I'm thinking a red bean and rice dish. All the recipes I have found have meat in them, which I can easily leave out, but what is a good way to keep the rice from getting sticky. Should I mix it all together? I don't know if they will have to reheat the stuff or not, so I'm not even sure whether or not to cook the rice.
As you may have guessed, I haven't tried a recipe quite like this before. [Image: glasses.gif] I have made black beans and rice, but I didn't have to take then anywhere.
