These are all really good recipes, but you really need to render bacon in your pot and sautee your onions, garlic, and spices in before you brown your beef... just my two bits. :-)

Here's a simple recipe I use:
2 lbs ground beef
1 large can light red kidney beans
2 small cans green beans
2 small cans corn
1 very small can of tomato paste
2 large cans of diced tomatoes
1 large yellow onion diced
1/4 cup of Frank's Hot sauce (or other)
3 tblspns of chili pepper
1 tspn red pepper seeds
1 tspn red pepper powder
2 tblspns garlic powder
1 tspn garlic salt

Brown beef with garlic powder and salt
Drain liquid from green beans, corn and kidney beans.
Add all ingredients to a crock pot and allow to cook a minimum of 12 hours, preferably 18-24 hrs.  Stirring occassionally. 

It makes a great chilli that's not too hot, but hearty with a good flavor.

Thank you for all the suggestions. I have taken ideas from everyone who posted, actually, and my own concoction is now bubbling on the stove. (I don't have a crock pot anymore, alas.) I'll let you know how the succulent dish turns out.

By the way, Res, I have nothing against other meats, I just didn't happen to have anything in the apartment except ground beef, fish, and sausage. Although if anyone has a recipe for fish chili, I'd love to see it!
