My Italian friends in Italy buy fresh pasta instead of making it.  I do the same here in the US.  You should be able to find a good recipe online, though, if you want to make ravioli from scratch.

Once you have some ravioli, a great thing to do with it is saute it in butter (real butter, not margarine) with fresh sage leaves.  Easy and delicious.

Ravioli is lasagna filling + home made pasta.  Mark Bittman's semolina pasta is as close to authentic tasting as I've been able to make myself. For lasagna filling, it's all about the cheeses, more than proportion. It's hard for me to say the recipe because I eyeball it and taste (raw eggs and all) but:

8oz ricotta
1 egg
1/4 - 1/2 lb grated mozzarella
1/8c. grated parmigiano
salt & pepper

If you can get the fancy ricotta in the aluminum tin at an Italian deli, use that 50-50. Yummers. But more sometimes can be too wet.

And then my ravioli are square because I'm too lazy for any other shape. Roll flat, cut squares, make a little dent with your thumb on the bottom halves, dollop of filling, and seal with a fork around the edges.
