There are Orthodox Jews who believe similarly: just as Adam and Eve were not created as babies, so were plants and animals created fully-developed, and the same principle can be extended to geology. Mountain ranges, according to this line of thought, do not necessitate that the apparent processes such as subduction actually created them.

Of course there are problems. Why should there be an "apparent" history at odds with an actual history? Perhaps the Fall is the answer, introducing a distance between man and God extending to a sort of blindness in the world, or the Deluge. I'm not certain how this problem could be resolved, or whether your interpretation (an earth "created old") is ultimately tenable. Its unfalsifiable nature might be a little too convenient.
