There are many practices in the Church which originated among Pagans but which the Church Christianized.  For example the Feast of All Saints was established to commemorate the re-dedication of the Pantheon (the Temple of All the Gods) into the Church of St. Mary and all the Martyrs.  Christmas probably began as a way to Christianize the Roman festival of the winter solstice.  The office of supreme pontiff (head of the Roman religion) was founded in 720 B.C. by second king of Rome! 

Ember Days are not pagan. They are penitential days that mark the changing of the seasons and remember the day Christ was betrayed (Wednesday), died (Friday), and buried (Saturday).
